FLAME GRILLED LEMON AND GARLIC CHICKEN
SERVES 4
2 x 2 - 2 1/2 pound chickens
1/2 cup lemon juice
1/2 cup olive oil
2 tablespoons grated fresh ginger
4 cloves of garlic, crushed
1 tablespoon curry powder
1/2 - 1 teaspoon chilli powder
1/2 teaspoon sugar
juice of 2 lemons
extra ground black pepper and salt, to taste
Cut chickens down the underside to open out flat.
Place into a ceramic dish and pour over remaining
ingredients except extra lemon juice, salt and pepper.
Refrigerate overnight.
Place chickens breast side up on to grill and cook
over low flame for 25 minutes. Turn chickens, baste
with marinade and continue cooking a further 20 - 30 minutes.
Remove from grill, pour over extra lemon juice and
season with salt and pepper.
