CHICKEN MOZZARELLA
SERVES 4
4 chicken fillets, skin removed
4 slices mozzarella cheese
4 thin slices smoked ham
1/4 cup pesto sauce
1 oz butter
1/4 cup chopped chives
1/2 cup white wine
1/2 cup chicken stock
1 tablespoon pesto sauce, extra
1/4 cup chopped sundried tomatoes
2 teaspoons cornflour
2 teaspoons water
Using a sharp knife cut a pocket in the
side of each chicken fillet. Insert cheese, ham
and spread with pesto. Melt butter in pan and
cook chicken over a medium heat for approxi
mately 3 - 4 minutes on each side or until
cooked through.
Remove chicken, add chives, wine and
stock and simmer 3 minutes. Add pesto and
tomatoes. Combine cornflour and water and
add to sauce. Simmer until thickened slightly.
Spoon sauce over chicken and serve.
