CHICKEN CHILLI DOGS
MAKES 8
8 oz chicken mince
1 egg, lightly beaten
1 1/2 - 2 cups cornflake crumbs, or similar
1 tablespoon sweet chilli sauce
1/2 cup finely chopped roasted cashews
Combine all ingredients together. Press
mixture around bamboo skewers that have
been soaked in water 30 minutes.
Refrigerate at least 1 hour.
Heat 2 tablespoons oil in pan over
medium flame and cook until golden brown
and cooked through. Serve with peanut sauce
( see Thai Style Lemon Beef Kebabs ) or pull
out skewers, place meat into long bread rolls,
top with chilli sauce, cheese and shredded
lettuce.
