BEEF WITH SPINACH AND SALMON SAUCE
SERVES 4
1 lb piece fillet steak
1 oz butter
2 cloves garlic
4 oz spinach, washed, blanched and squeezed dry
1 tablespoon oil
Remove excess fat and sinew from beef and cut a pocket along the
length of meat. Heat butter and saute garlic 2 minutes, add spinach
and cook a further 2 minutes. Spoon spinach mix into cavity of beef
then secure with metal skewers.
Heat oil in pan over high flame and seal meat well on both sides
( approx. 3 minutes ). Cook indirectly on high 7 - 10 minutes.
Place beef onto grill and cook a further 2 minutes. Meanwhile make
sauce in pan using residual heat.
SALMON SAUCE
1 oz butter
2 teaspoons all purposeflour
4 oz soft salmon - flavored cheese
3/4 cup cream
1/4 cup beef stock
Melt butter, add flour and cook 30 seconds. Add remaining ingredients
and cook until thickened and smooth. Spoon sauce over sliced beef and serve.
