BARBECUED PESTO FISH
SERVES 4
1/2 cup fresh basil leaves
2 cloves garlic, crushed
1/2 cup salted roasted cashews
1/2 cup olive oil
1/4 cup parmesan cheese, grated
4 fishsteaks
Place basil, garlic and cashews into a food processor or
vitamizer and pour oil in a steady stream while machine is
operating. Add parmesan cheese and process further -- about 15
seconds. Spread pesto over both sides of fish, place on a piece
of buttered foil, wrap securely and place on the grill over a
low flame for 15 - 20 minutes or until cooked through.
