Heat, on the left, draws air in from the damper and passes it over a boiling chamber, which continuously bastes the meat, keeping it moist while it cooks. When the heat has completely filled the cooking area, it is drawn down through the meat to an internal exhaust vent located at the opposite end of the cooker. |
